So what is banana water?
A drink made from whole bananas and nothing else. No added water, no added sugar.
Bananas are about 75 percent water. We break the fruit down with food-grade enzymes, then press and filter it. What's left is the banana's own water: thin, lightly sweet, and carrying the banana's potassium.

Ever tried juicing a banana?
- Press an orange. Juice.
- Press an apple. Juice.
- Press a banana. Paste.
Bananas are about 25 percent starch, so pressing one gives you paste, not juice.
An enzymatic step has to break that starch down before any liquid can be separated, and that's only the beginning. The enzymes, the pressing and the filtering all have to be dialled in to get a clear, light drink. That's why only a couple of companies in the world make it at commercial scale.

A drink doesn't care what a banana looks like.Once the fruit is pressed, a marked skin or an odd shape makes no difference to what's in the can. That makes banana water a good home for fruit that's perfect inside but too wonky for the shelf.
